Jeg har de siste m\u00e5nedene laget mine daglige br\u00f8d<\/a> med surdeig i stedet for gj\u00e6r. Surdeig gj\u00f8r br\u00f8det satigere, seigere, mer holdbart, og smaker bedre. Det er flere grunner til det som har med kjemi \u00e5 gj\u00f8re, og mye av det skyldes tidsbruken. Det tar nemlig tid \u00e5 bake med surdeig! Du kan sammenligne det med \u00e5 bruke sv\u00e6rt lite gj\u00e6r, som ogs\u00e5 gir et godt resultat, men kort oppsummert s\u00e5 er surdeig en annen art i gj\u00e6rfamilien enn den du finner i kj\u00f8pegj\u00e6r, pluss at surdeig inneholder melkesyrebakterier som gir en litt annen fermentering av deigen.

\n\u00c5 komme i gang med surdeig er ganske lett, men tar noen dager. Du kan selvsagt f\u00e5 en avlegger av andre, f.eks. av meg hvis du vil det, bare sp\u00f8r, men det er s\u00e6rdeles tilfredsstillende \u00e5 etablere surdeigskulturen selv fra bunnen av.<\/p>\n
